Made in the brut (dry) style. We added an enzyme at fermentation to help the yeast dry the beer out further. No hops were added until the end of the boil to give lots of flavour, but no bitterness. And then we dry hopped this beer twice with Topaz and Motueka hops to give even more flavour.
